It’s March and madness is on the horizon. It’s The Most Wonderful Time of the Year, and I’m here for it. I’ve cleared my calendar and put my family on notice. It’s going to be wall-to-wall basketball throughout the month of March. I even have a few game day snacks in the works – including these Pigs in a Basket*.
It’s all about the garlic smoked sausage
These have become a favorite snack in our house, and it’s because of one big reason – the amazing flavor of the garlic smoked sausage from Southside Market & Barbecue.

This really shouldn’t be much of a surprise. I mean, Southside Market & Barbecue has been smoking meats in Elgin, TX, since 1882. As a matter of fact, they’re the oldest barbecue joint in all of Texas.
I think they’ve figured out a thing or two over the years. Their expertise definitely shows in their garlic smoked sausage!
They make their sausages fresh in-house every day. The garlic smoked sausage consists of coarse-ground pork stuffed into a natural casing. And, of course, it’s chock-full of garlic It’s full of flavor for garlic lovers.

How to make Pigs in a Basket
Yields 12 muffins
Approximately 18 carbs per muffin
Ingredients
- 2 Southside Market & Barbecue Garlic Smoked Sausage links
- 2 ½ cups Italian blend shredded cheese
- 1 can 8-count butter flavored jumbo refrigerated biscuits
- 2 Tbsp minced garlic
- Nonstick spray
- 1 Jar marinara sauce (optional)
- 1 Jar Alfredo sauce (optional)
Utensils
- Mixing bowl
- Measuring cup
- Tablespoon
- Cutting board
- Kitchen Knife
- Rubber scraper spatula
- 12-count muffin pan
What to do
1.) Preheat oven to 350° F.
2.) Cut each biscuit into nine squares and place them in the mixing bowl.
3.) Slice garlic smoked sausage lengthwise and then lengthwise again so each sausage is four strips.
4.) Dice the sausage into quarter-inch cubes. Add to mixing bowl.
5.) Add garlic.
6.) Add cheese.
7.) Use rubber spatula and mix. Sometimes I’ve had to use my hands.
8.) Lightly grease muffin pan with nonstick spray. Add mixture to each cup, filling them approximately ¾ full.
9.) Bake 25-30 minutes until golden brown.
10.) Serve warm. They’re great on their own. They’re also perfect for dunking in marinara or Alfredo sauce (or both)!
11.) Enjoy while watching wall-to-wall basketball! After you have your first, you’ll probably declare, “And one!” while you grab another.
12.) If in the off chance there are any leftovers, store them in a tightly-sealed container.

*When we first created this snack, we tried coming up with a name for them. I originally came up with the oh-so-original title of Garlic Smoked Sausage Cups. Aiden suggested something like “Basket Pigs.” Aly should get full credit for this name – Pigs in a Basket. She came up with it because 1.) it’s a nice play on the classic Pigs in a Blanket (and can I mention that these sausages would be amazing giant Pigs in a Blanket?) and 2.) if you look at them just so, they look like they’re mini basketballs in a basketball net. OK, that might be a bit of a stretch. Work with me here.
