I’m almost two years into my journey to cut carbs in an effort to keep my blood sugar in check thanks to my surprise diabetes diagnosis while I was in the hospital. I’ve found a lot of new decent midday snacks. I’ve also rediscovered a few old favorites – like cottage cheese. And cheese sticks.

I think the first time I had jerky was on a Scout-related camping trip. It might have even been on one of my many treks to Philmont over the years.
