Indian (India…not Native American) food

Last night, we ventured into the wonderful world of international cooking. Christy made some Chicken Biryani with some of the jarred curry paste we’ve had (unopened) for almost a year. It had a really good flavor. Definitely a dish worth having again. That’s a good thing, since it takes very little curry paste to adequately flavor a dish and we have tons of paste left over!

The only problem was the rice. We followed the directions on how to cook the Basmati rice. After an hour of baking, it was still very undercooked. After a while, we gave up and just ate it with the half-baked rice. I don’t think it was supposed to be that crunchy. Hopefully we’ll get the tricks figured out, because it was a really good dish! I like Indian food a whole lot more than I thought I would have.

**I’m sure spell check is going to have fun with “Biryani” and “Basmati!” Live Journal’s spell check doesn’t even recognize “Christy” as a properly spelled word! Simple minds, simple pleasures, I guess**
